Stuffed capsicum – fancy but easy baking recipe (cook to impress)

Tired of eating the same food everyday in lockdown? Want to try something new but don’t want to put a lot of effort? Try these stuffed baked capsicum. They are special and yet easy.

Added benefit: impress mom in 30 mins with this desi food recipe with a twist

Ingredients

  1. Capsicum/bell pepper (use all colors – green, yellow, red)

  2. Potatoes

  3. Cheese (preferred: cheddar)

  4. Eggs (skip if you are vegetarian)

  5. Olive oil, salt, pepper, other spices

  6. Optional:

  7. Sauce/salsa/ketchup/chutney

  8. Oregano for garnish

Preparation

  1. Pre-heat oven at 175-180°C for 15-20 mins while preparing the stuffing and capsicum shells

  2. Stuffing:

  3. Boiled & mashed potatoes – add salt, pepper, spices as per your taste

  4. Grated/ sliced cheese

  5. Whipped eggs

  6. Capsicum/bell pepper shells:

  7. Cut capsicum in 2 halves (vertically)

  8. Remove the seeds


Stuffing the capsicum/bell pepper

  1. Base of shell: add a drop of oilve oil, salsa sauce/ketchup, and cheese

  2. Stuff with mashed potatoes mixture

  3. Add more cheese and sauce

  4. Pour the whipped eggs

  5. Add more cheese



Baking the stuffed capsicum/bell pepper (oven/pan)

  1. Oven:

  2. Place all the stuffed capsicum on the pre-heated tray

  3. Bake at 175-180°C for 20-25 mins in oven

  4. Pan:

  5. Slightly grease a non-stick pan

  6. Place all the stuffed capsicum on the pan

  7. Simmer and close the lid for 25-30 min


Tips

  1. Garnish with oregano/olive oil

  2. Add peas with potatoes mixture

  3. Eat them as-is or serve with bread for a complete meal

  4. You can also make it without eggs
